Saturday, June 5, 2021

The origin and domestication of sweet potato occurred in either Central or South America.  In Central America, domesticated sweet potatoes were present at least 5,000 years ago. It was introduced to the Phillipnes, Japan, and China in the 1500’s, and 1600’s. Today the sweet potato belongs to the world and is particularly prevalent in Africa where increased cultivation was encouraged because vitamin A deficiency is such a health problem. A 2012 study of 10,000 households in Uganda found that children eating beta-carotene enriched sweet potatoes suffered less vitamin A deficiency than those not consuming as much beta-carotene. So let us toot this tasty tuber’s horn today with some delectable concoctions: Sweet Potato Gnocchi with Sage and Brown Butter, African Sweet Potato and Peanut Stew, Roasted Sweet Potato with Chimichurri Sauce and Avocado Mash, and Sweet Potato Brownies. 12:00 p.m., ZOOM and Facebook Live, FREE Zoom participants register here:
